Sweet Potato Hummus with Pita
- Makes about 6 servings
What you'll need
½ sweet potato
½ cup chickpeas
¼ cup whole milk yogurt
¼ tsp garlic powder
1 tsp lemon juice
How to make it
- Preheat oven to 400°F
- Scrub sweet potato and pierce with fork on all sides. Place on parchment lined baking sheet and bake for about 30-40 minutes, or until fully cooked.
- Rinse and drain chickpeas from can.
- Place cooked sweet potato and chickpeas with all other ingredients into a food processor and blend until there are no lumps.
- For older babies or tots serve with whole grain “finger toast” or pita.
